Sandwich Bread!
I was unofficially diagnosed as gluten sensitive a few years ago. If I eat too much store bought products containing gluten, I get the bloating, digestive pain, and generally feeling awful that comes with the sensitivity, which goes away after removing the gluten from my diet. However, I feel better when I do have a little bit of gluten, and find that bread, even white bread, doesn't bother me if I make it myself.
I have concluded that I'm not gluten sensitive--I'm sensitive to the over processing and preservatives that come with pasta--which makes me feel worse than anything else--too much store-bought bread, dry cereal, and the various other things we eat on a daily basis. So, I've been making my own bread and researching bread machines so I can easily make sandwich bread and other yummy breads without having to spend six to twelve hours in one day keeping an eye on the bread. I still can't eat a lot, and it's better if it's whole grain, but it's still better than not having anything at all.
Today, I tried making white sandwich bread, and it turned out fabulously. I've never had a straight yeast method dough rise this beautifully before, and it tastes like heaven. I made a sandwich with it and it was the best turkey sandwich I've ever had.
I did have to do some battling with my cat, who refuses to eat cat food with grain in it but loves bread and crackers. She's stolen crackers and stares at us as we eat sandwiches because they have not only bread but also meat. Making a sandwich calls her to the kitchen better than the can opener. I turned my back on a nice slice of still warm from the oven French rye bread, nicely buttered, for under a minute and turned around to find the cat with her face stuffed in the center of my slice of bread munching away. At least she has good taste. So this evening I had not only fresh baked bread, but turkey along with it and she desperately wanted some. She pulled her I'm-so-cute-you-know-you-want-to-share routine so I gave her some crumbs. She purred as she ate and promptly left to see if my husband had any bread. She has no shame, as he says.
I am very excited to keep using this bread for my sandwiches and hope that my continuing relief in symptoms will be upheld by the homemade sandwich bread.
